The prevalence of obesity and overweight conditions has steadily increased over the years regardless of age, gender, or ethnicity. This body weight problem increases a person’s risk of developing a number of chronic illnesses including diabetes, hypertension, heart disease, stroke, and some types of cancer. Many health experts turned their attention to carbohydrates citing high amounts of sugar and starchy foods as the culprits for their excessive caloric load, which results in weight gain. Thus, the general public were encouraged to consume high-protein foods with less sugar and other digestible carbohydrates. As a result, low net carbohydrate versions of popular consumer products like bakery, pasta and snack products are increasing in demand. This webinar will discuss the unique roles of Arise® wheat protein isolates and Fibersym® RW resistant wheat starch in formulating high-protein, low net carbohydrate baked goods.
